Hello! I'm Bill, and my journey into the world of food has been anything but ordinary. With over two decades of experience in the culinary and food industries, my passion for creating exceptional food and delivering quality products is at the heart of everything I do.
The Beginning: Crafting Culinary Skills in Victoria
My career began as an apprentice chef in the picturesque country regions of Victoria, where I trained at renowned restaurants and wineries. These early years were foundational, giving me the skills and knowledge I needed to excel in the kitchen. As a qualified chef, I quickly stepped up into the role of Sous Chef, working in high-end establishments and honing my expertise.
Nine Years in London: Royal Events and Culinary Innovation
My culinary career took me to London, where I spent nine incredible years expanding my horizons. I worked with Mustard Catering, one of London’s oldest and most respected catering firms, catering for royal palaces and exclusive high-society events. The experience I gained from working at prestigious events and with renowned clients was invaluable.
During this time, I also had the opportunity to help build Mustard Foods, an £8-million food manufacturing business. As I transitioned through various roles from Chef to Management, I worked closely with James Robins, former Executive Chef of Mustard Catering to create an innovative food production company that quickly became a leader in its field. My time in London was a period of growth and learning, both in the kitchen and beyond.
Returning Home to Australia: Leading in the Horticulture Industry
After my time in London, I returned to Australia to bring my expertise back home. Over the last six years, I’ve worked with Fresh Leaf, a cutting-edge hydroponic herb horticulture company supplying fresh produce to major supermarkets. Starting as a Production Supervisor, I eventually stepped into the role of Chief Operating Officer (COO), overseeing multiple teams and managing up to 100+ employees. This role allowed me to combine my culinary knowledge with my management experience to ensure the highest standards of quality and efficiency in food production.
With years of experience in catering, food manufacturing, and horticulture, I bring a unique perspective to everything I do. Whether it’s creating dishes, managing operations, or overseeing production processes, I am always focused on delivering the very best.
